Welcome Summer! I'm really hoping this summer will be better than the rest of the year has been so far. My goal is to get out with the RV and take the kids around the state, seeing some things that even I haven't seen yet. If all goes well *cross fingers*.

Next week's menu plan again is gluten free, and mostly dairy free. We are still not 100% gluten free/dairy free here. It's a goal. I KNOW what gluten does to my body, and it's not pretty. Dairy, too, to a lesser degree. Even my kids have learned that their bodies cannot handle dairy. Some weeks we get closer to gluten free than others.
Gluten still affects my joints, and in turn, my mood. The problem is gluten products are cheap, which when you are on a limited budget, is easy. I can typically find gluten-free substitutions at Aldi's, which is good.
I realized only AFTER I put all these recipes together that there is a LOT of cheese! I don't think these recipes are dependent on the cheese though. You can either omit it or use dairy-free. Another great option (but not necessarily one your kids will approve of) is to use avocado instead. Most of my kids would go with that option, but one will not! You know your family best.

Breakfast:
Complete oatmeal. Takes a satisfying bowl of oatmeal and gives it a protein boost. The recipe calls for French Vanilla but Dutch Chocolate would equally be tasty!
Chunky Monkey Paleo Banana Cookies by The Endless Meal. Who wouldn't like cookies for breakfast?
Lunch:
Gluten-free corn dog by A Few Shortcuts.
Single-Serve Mac n Cheese by Simply Gluten Free.
Creamy Gluten-Free Tomato Soup by Officially Gluten Free, paired with a gluten-free cheese sandwich maybe?
California Turkey and Bacon Lettuce Wraps by Iowa Girl Eats.
Buffalo Chicken Taco Salad by Peas and Crayons. (This one has cheese again. Can either substitute dairy free, avocado, or leave out all together.)
Dinners:
Gluten-Free Loaded Baked Cauli Casserole by Simply Gluten-Free
Ranch Chicken Tacos by All-Recipes
Meatloaf and Mashed Potato Cupcakes by Simply Gluten-Free
Slow Cooker Honey Garlic Chicken by TipBuzz
Sweet and Sour Teriyaki Meatballs with Broccoli Fried Rice by Clean Eating with Kids

Desert:
This week- my favorite...BROWNIES!! This particular recipe includes bonus protein, plus if you choose to use Complete shake powder it can be completely plant based. I would use Dutch Chocolate, of course, for the most chocolate-y brownies!
Shopping List (.pdf) I've adjusted the list to list gluten-free subs for anything that might have gluten in it. These recipes are supposed to be all gluten free, but even one recipe I noticed called for whole grain breadcrumbs. I've included gluten-free breadcrumbs on the list.
